Sweet and Sour Pork Chops


2 lb. boneless pork loin
1/2 c. packed brown sugar
2 T. cornstarch
1 20 oz. can pineapple chunks
1/4 c. vinegar
1/4 c. water
1 T. soy sauce

Cut pork loin into 1 inch cubes.  Spray large frying pan with vegetable spray and brown the pork.  Season pork with salt and pepper.  Remove from pan.  Add the brown sugar and cornstarch to the pan and stir until well mixed.  Add pineapple, vinegar, water, and soy sauce and stir until sauce thickens.  Return the browned pork back into the pan and stir until well coated.  Served over jasmine rice.  Add more salt and pepper to taste.
