Here is an another favorite recipe from my mom, Nell Andersen. The only bad thing about this cake is scraping the bowl. This batter is nasty! But the cake is amazing!!! It is an easy and very moist cake.
1 c. sugar
1/2 c. cocoa
2 t. soda
1/2 t. salt
1 c. mayonnaise
1 c. water
1 t. vanilla
2 c. flour
Bake at 350 for 30 minutes in a 9x13 pan. (This is a story included at the bottom of the recipe: A lady eating at one of Mr. Merrit's Restaurants in Washington D.C. told the cook she would give him $100 for this recipe.)

Coleslaw
Here is an old favorite recipe from my childhood. Every Sunday before church my mom (Nell Andersen) would have each of us kids make something for dinner. It was so easy because everyone did their part and our Sunday dinners were the best! This was one of our Sunday dinner favorites. I just found it in a pile of papers and had to post it. I will be making it soon and post a picture.
1/2 head grated green cabbage
1 small can crushed pineapple-drained
2-3 bananas cut up
Dressing:
1/2 c. salad dressing
1 c. cream or milk
2 T. Sugar
Mix well and pour over salad and stir.

Raisin Bars

Bring to a boil to soften raisins:
1 c. raisins
1 1/2 c. water
In a mixing bowl combine:
1 c. sugar or brown sugar
1/2 c. shortening
1 egg
Add:
3/4 c. raisin liquid
1 t. cinnamon
1 t. soda
1/2 t. salt
Add:
2 cups flour
boiled raisin
chopped walnuts if desired
Grease and flour a cookie sheet. Bake at 350 for 10-15 minutes or until done. Ice with a powdered sugar glaze (glaze recipe coming soon!) Cut into squares and serve.

dash salt
1/2 c. powdered sugar
2 c. flour
Combine and mix well. Press into 9x13 pan. Bake at 350 for 15 minutes or until brown.
Filling:
4 beaten eggs
6 T. lemon juice
2 c. granulated sugar
1/4 c. flour
Combine flour and sugar. Mix unbeaten eggs and lemon juice. Pour into slightly cooled crust. Bake at 350 for 25 minutes or until set. Cool and sprinkle with powdered sugar. Makes 3 dozen 1 1/2 inch bars.
