Grandma Bessie Andersen
2 c. shortening
2 c. sugar
1 c. brown sugar
4 eggs—beaten
2 T. milk
2 t. vanilla
2 t. soda
6 ½ c. flour
1 t. salt
Mix shortening, sugar, and brown sugar together. Add beaten eggs, milk, and vanilla. Mix in dry ingredients. Roll into 4 rolls—2 inches thick and refrigerate for 1-2 hours.
Filling:
1 ½ c. water
2 c. raisins
¾ c. sugar
2 T. flour
1 t. vanilla
Chopped nuts
Blend water and raisins together in blender. Pour mixture into a pan and add sugar, flour, vanilla, and chopped nuts. Stir and boil until thick.
Slice dough into ¼” thick slices, add 1 t. filling, then top with another slice of dough. Seal around edges. Bake at 350 for 10 minutes.
*For cookies without filling, cut into ¼” slices and bake at 350 for 7-8 minutes.
