Here is an old favorite recipe from my childhood. Every Sunday before church my mom (Nell Andersen) would have each of us kids make something for dinner. It was so easy because everyone did their part and our Sunday dinners were the best! I just found it in a pile of papers and had to post it. I will be making it soon and post a picture.
Lemon Bars
1 c. soft butter
dash salt
1/2 c. powdered sugar
2 c. flour
Combine and mix well. Press into 9x13 pan. Bake at 350 for 15 minutes or until brown.
Filling:
4 beaten eggs
6 T. lemon juice
2 c. granulated sugar
1/4 c. flour
Combine flour and sugar. Mix unbeaten eggs and lemon juice. Pour into slightly cooled crust. Bake at 350 for 25 minutes or until set. Cool and sprinkle with powdered sugar. Makes 3 dozen 1 1/2 inch bars.
